In 2016, the Naples YMCA, with the help of Publix Charities and the American Culinary Federation (ACF), opened a demonstration kitchen on the west side of campus.
In 2017, ACF will begin a series of monthly fine-dining cooking classes, featuring exoctic yet healthy dishes and paired wine, called “Beyond the Plate” at the YMCA demonstration kitchen.
The first class is set for Jan. 5 at 6:30 p.m. Tickets to classes are $150 per seat and money raised by the class will directly fund youth programs at the Y.
“We really wanted this to be an experience with a dual purpose,” CEO Paul Thein said. “This class is fun and healthy, but it also raises money to support our youth programs on campus.”
The January class will be led by Olympic medalist Chef Ralph Ferco, the executive chef from Kensington Golf & Country Club. Feraco also heads the SWFL ACF chapter.
“We’re so honored and excited to have Chef Ralph teaching classes at the Y,” Thein said. “It’s not everyday you can learn from the best, and he is definitely the best.”
Everyone who attends the dinner will take home what they cook, along with a recipe card for the meal.

In the coming months, the Y will launch two more class series. The first is a more affordable class designed for everyday healthy cooking. The second is a children’s class, which will aim to teach children how to make healthy choices when it comes to their diet.
